Abstract:
This thesis explores the intricate relationship between the intangible cultural heritage (ICH) of food traditions and their evolving roles within the contexts of tourism, sustainable development, and cultural identity, with a focus on Venice. It delves into the authenticity, preservation and innovation of culinary traditions and considers how these traditions shape destination branding and the promotion of tourism.
Chapter I establishes a theoretical framework for understanding ICH, particularly relating to food, highlighting its influence in transmitting cultural identity and strengthening community ties. It examines the relevance of food as a form of intangible cultural heritage and outlines the importance of safeguarding and promoting culinary traditions.
Chapter II delves into the concept of culinary tourism and its impact on the cultural identity of touristic cities. The role of food in enhancing destination attractiveness and its contribution to place attachment and destination image are analyzed. Furthermore, the linkage between local culinary traditions and sustainable tourism practices is examined.
A methodological approach to the portrayal of Venetian cuisine by multiple entities, through the lens of optimal distinctiveness theory, is outlined in chapter III. The research methodology entails conducting a visual analysis to investigate the imagery showcased by a diverse array of dining establishments, ranging from luxury restaurants to traditional Bacari. The research process involves meticulous target selection and the subsequent analysis of the food images shared by different actors, facilitating a comprehensive examination of the multifaceted culinary representations of Venice. The study aims to understand how the diverse food images from various actors contribute to shaping the city's identity.
A nuanced and critical examination of Venetian cuisine's authenticity is discussed in the last section, offering thoughtful reflection on the subject and providing insights into the challenges and opportunities in preserving and promoting authentic culinary traditions.
