dc.description.abstract Coffee market has always been considered as “mature” because of its low and stable consumption growth, but new issues are changing market’s trends. Then, the objective of this thesis is the analysis of the evolution of the international coffee market that is today facing new challenges: the emergence of social responsibility, the dramatic decline of climate conditions and the consequences of the Covid-19 pandemic. The thesis is structured in chapters. On the first chapter, a brief introduction of the content is made. The second chapter presents an overview of coffee as a plant and its ways of cultivation and transformation processes from green bean to coffee as we know it. The third chapter describes the international coffee market focusing on the new dynamics of supply and demand, aiming at understanding how they are evolving in response to the new challenges of our times. The following two chapters report the impact of the current pandemic on coffee’s supply and demand and of the consequences of climate change on cultivation. Then, the thesis analyzes the case study of Brazil. Some conclusive remarks close the thesis. it_IT
