dc.description.abstract This dissertation would aim to explore revenue management under strategic management view in food service industry. Food service industry is characterised by high competition and rapidly changing trends. However, the large amount of small companies and lack of managerial skills make controlling practices rather rough and inefficient due to difficulty of gathering precise information. Controlling in food service has been historically cost driven; thus, practices are mainly focused on cost accounting. Revenue management tries to switch internal view of controlling toward an external view as analysis are market based. Revenue management would drive managers to handle the increasing competition through a market-oriented view; moreover, it would be used by either small and large companies as analysis are based on available information and comparison with peers and leaders' best practices. it_IT
